Skip the pre-shredded carrots from the grocery store. Freshly shredded carrots provide more moisture and a softer texture. I don’t peel my carrots either – there are so many good nutrients in the skin.
Drain the Pineapple Well
Too much liquid can affect the texture of the cupcakes. Be sure to drain the pineapple before adding it to the batter.
Don’t Overmix
Mix just until the ingredients are combined. Overmixing can lead to denser cupcakes.
Cool Completely Before Frosting
Cream cheese frosting spreads best on completely cooled cupcakes.

Swap the Walnuts
