How to Make Chocolate Cookie Ice Cream Sandwiches
1: Preheat the Oven
Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper (if needed).
2: Make the Cookie Dough
In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
Add the eggs and vanilla extract and mix until fully combined.
Next, add the flour, cocoa powder, espresso powder, baking soda, and salt. Mix until just combined, then fold in the semi-sweet chocolate chips.
3: Scoop and Bake
Using a 3 tablespoon cookie scoop, scoop the cookie dough onto prepared baking sheets. Slightly flatten the tops before baking.
Bake for 9–10 minutes.
Once the cookies come out of the oven, gently flatten them further using the back of a spatula. This helps create the perfect shape for ice cream sandwiches.
Allow the cookies to cool completely before assembling.
4: Assemble the Ice Cream Sandwiches
Place about 1/2 cup of slightly softened ice cream onto the flat side of one cookie. Top with another cookie and gently press together.
If desired, roll the edges in mini chocolate chips or sprinkles.
