Last night’s dinner: chicken seared in cast iron, penne, and my homemade Alfredo sauce. It’s butter, cream cheese, heavy cream, milk, garlic, and Parmesan, and it’s done in 15 minutes. There’s no flour, no cornstarch, and nothing from a jar. It isn’t a 37-ingredient recipe either, just real food that’s actually doable on a Tuesday night.

We serve it family-style so everyone builds their own bowl.

A tip so it doesn’t break on you: keep the heat medium-low and add the Parmesan slowly while you whisk. If it gets too thick, a splash of milk brings it right back.

Everybody warns you about the cakes. Nobody mentio Everybody warns you about the cakes. Nobody mentions the potatoes.

Altitude changes everyday cooking too. Water boils at a lower temperature, so anything you boil or simmer takes longer, and liquid cooks off faster, so soups and sauces can reduce before the food is actually done.

Follow and comment ALTITUDE and I'll send you my free high-altitude baking guide.

My everyday fixes:
• Add a few minutes to pasta, rice, potatoes and eggs
• Keep extra broth or water nearby for soups and braises
• Put a lid on it when you can
• Give dinner a little more time than the recipe promises

This is why I say everyday cooking from sea level to high altitude. It's not all cake up here.

You just start noticing things. Cookies spread. Cakes sink. Bread is ready an hour early. It's all the same cause: less air pressure and drier air than the recipe was written for.

The short version:
• Check your oven's real temperature
• Use a little less baking powder and soda
• Add a splash more liquid and a spoonful more flour
• Trust the dough over the timer

None of it is hard. It's just easy to not know about.

Fractions hit different when there's a cookie at t Fractions hit different when there's a cookie at the end.

Doubling a recipe is multiplication. Halving it is division. Measuring is fractions. Waiting for the timer is the hardest subject we teach. Our kitchen has been a classroom more times than I can count.

my grandma solved the “no eggs in the house” probl my grandma solved the “no eggs in the house” problem before I was even born, and this cake is proof. 🍰

out of eggs, out of butter, no mixer in sight — just a bowl, a whisk, and three little wells pressed into the flour for the vinegar, vanilla, and oil.

✨ what makes it work:

vinegar + baking soda do the job eggs usually do
stays moist for days, not just day one
one bowl, one pan, minimal cleanup
naturally egg-free and dairy-free (unfrosted)

If your starter doesn't look like the one in the t If your starter doesn't look like the one in the tutorial, the tutorial probably wasn't filmed at your elevation.

Up here, starters tend to move faster. Mine peaks and falls sooner than most feeding schedules expect, and that's not a problem. It just means the schedule was written for somewhere else.

Follow and comment "ALTITUDE" and I'll send you my free high-altitude baking guide.

What I do instead of following the clock:
• Feed it when it has peaked and started to drop
• Go by look and smell, not hours
• Keep it a touch wetter, because our air is so dry
