My husband loves spice so figuring out how to make jalapeño poppers was a must in our marriage. No matter your spice tolerance level these are sure to be a crowd pleaser. I typically leave as many seeds as possible (and make sure I know which ones those are!) in the jalapeño for him, but take ALL the seeds out for myself and most of our guests, making them a lot less spicy. These bacon-wrapped jalapeño poppers are truly the perfect appetizer as they have a great mix of protein and carbs and are baked, not fried.
Why You’ll Love This Recipe:
Ingredients
- Jalapeños – fresh and spicy – When picking a jalapeño you can typically tell how hot it will be by how many white lines or “stretch marks” it has on the skin; the more lines, the hotter it will likely be. Shiny and smooth jalapeños are younger and tend to be less spicy.
- Cream cheese – smooth and creamy – Make sure you use the brick of cream cheese not the spreadable kind in a tub.
- Garlic powder, onion powder, dried parsley, salt, and pepper – for extra flavor – Don’t skip these, it really adds a lot.
- Bacon – crispy and savory – You could cut the bacon in half and do a half per jalapeño popper if you are running low.

Step-by-Step Instructions
- Prepare the Jalapeños – Slice them in half and remove seeds (or leave them in if you are brave) for a balanced spice level.
- Make the Cream Cheese Filling – Mix cream cheese with seasonings.
- Stuff the Jalapeños – Generously fill each jalapeño half with the cream cheese mixture.
- Wrap with Bacon – Secure with toothpicks if necessary.
- Bake to Perfection – Bake at 400°F for 25-30 minutes until bacon is crispy.
Tips for Success
- Use room temperature cream cheese for easy mixing.
- For spicier poppers, leave some seeds in the jalapeños.
- Cook on a wire rack over a baking sheet for even crispiness.
Storage & Reheating
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven at 375°F for 10 minutes to keep them crispy.
