A galette was somewhat of a new concept to me, but once I tried one, I was hooked. It wasn’t just the ease of making it, it was the way the crust cooked leaving some parts flaky and some parts a little more doughy that truly made this dish unique. For this galette I have taken some sweet potatoes, sage, hamburger, and some cheddar cheese and combined them in one dish making a beautifully comforting and hearty meal for any night of the week.

What is a Galette? A galette is a rustic, freeform tart that originates from France. Unlike traditional pies or tarts, which require a structured pan, a galette is made by folding the edges of the dough over the filling, creating a beautifully imperfect shape. The crust is typically flaky and buttery, while the filling can be sweet or savory, making galettes incredibly versatile.

Ingredients & Substitutions

  • Crust: All-purpose flour, butter, Greek yogurt, sugar, and salt.
    • Substitutions: Swap Greek yogurt for sour cream for a slightly tangier crust.
  • Filling: Ground beef, onion, garlic, sweet potato, cheddar cheese, sage, salt, and pepper.
    • Substitutions: Use ground turkey instead of beef, or Gruyère instead of cheddar.

Step-by-Step Instructions

  1. Make the Galette Crust
    • Grate butter into the flour, add sugar and salt, mix, and blend with Greek yogurt.
    • Chill dough before rolling it out.
  2. Prepare the Filling
    • Sauté onions and garlic in butter, then brown the beef.
    • Add fresh sage, cook until tender.
  3. Assemble the Galette
    • Roll out the chilled dough into a rustic circle.
    • Add one thin layer of sweet potatoes (Use this to slice the sweet potatoes – your welcome in advance), beef mixture and then cheese. Repeat one more time leaving space around the edges.
    • Fold edges inward for a freeform tart.
    • Brush the outside of the tart with an egg wash.
  4. Bake and Serve
    • Bake at 400°F for 35-40 minutes. This is my favorite pan to bake on as things don’t stick!
    • Let cool slightly before slicing and serving.

Serving Suggestions

  • Serve with a light green salad for balance.
  • Pair with a glass of red wine or a warm herbal tea.
  • Drizzle with balsamic glaze for extra depth of flavor.

Storage & Reheating Tips

  • Store leftovers in the fridge for up to 3 days.
  • Reheat in the oven at 350°F to maintain crispness. This is not something I would reheat in the microwave. It just won’t taste as good as the crust will get soft and soggy.

Beef Sweet Potato Sage Galette

Ingredients

Galette Crust

  • 2 Cups All-Purpose Flour
  • 1 Cup Butter - Grated
  • 1/4 Cup Sugar
  • 1 tsp Salt
  • 3/4 Cup Greek Yogurt

Galette Filling

  • 2 Tbsp Butter
  • 1 Small White/Sweet Onion - Diced
  • 4 Garlic Cloves - Diced
  • 1 Pound Hamburger
  • 2 Tbsp Chopped Fresh Sage
  • 1 Small Sweet Potato - Sliced Very Thin
  • 1 Cup Shredded Cheddar Cheese
  • 2 tsp Salt
  • 1 1/4 tsp Pepper
  • 1 Tbsp Olive Oil

Egg Wash

  • 1 Egg
  • 1 tsp Water

Instructions

Make the Galette Crust

  1. Using a cheese grater, grate the butter into the flour. With your hands mix the butter and flour together to coat all of the butter in the flour.
  2. Add the sugar and salt, then mix.
  3. Add the Greek yogurt and stir until the crust comes together. After the yogurt is mostly incorporated I find it easier to then use my hands to get the crust to come together.
  4. Chill dough while you prep the filling and before rolling it out.

Prepare the Filling

  1. Sauté onions and garlic in the butter, then add the hamburger, 1 1/2 tsp of the salt and 1 tsp of the pepper to the pan and brown.
  2. After the hamburger is cooked and the onion and garlic are soft, add the fresh sage and cook until tender.

Assemble the Galette

  1. Roll out the chilled dough into a rustic circle about 12-15 inches in diameter. The bigger your circle the more crust you will have on top.
  2. Leaving space around the edges of the crust (as you will fold the crust over the top), add one thin layer of sweet potatoes (use this to slice the sweet potatoes), 1/2 Tbsp of olive oil, 1/4 tsp salt and 1/8 tsp pepper then the beef mixture and top it with 1/2 cup of the cheese.
  3. Repeat one more time (this will give you 2 layers).
  4. Fold edges inward for a freeform tart.
  5. Brush the outside of the galette with the egg wash.

Bake and Serve

  1. Bake at 400°F for 35-40 minutes.
  2. Let cool slightly before slicing and serving.

Notes

  • Store leftovers in the fridge for up to 3 days.
