I grew up loving pop tarts, but once I started cooking from scratch, I realized how easy it is to make a homemade version that tastes even better. These homemade pop tarts are flaky, buttery, lightly sweet, and made with real ingredients you can actually pronounce.
Instead of processed pastries filled with artificial flavors, this from-scratch version uses simple pie crust and your favorite fillings. They’re perfect for busy mornings, after-school snacks, or even as a fun baking project with kids.
And the best part? You can customize the fillings to whatever your family loves most.
Why You’ll Love These Homemade Pop Tarts
REAL: Made with real, simple ingredients. No preservatives or artificial flavors
TASTY: Flaky, buttery crust. Easy to customize with different fillings.
MAKE-AHEAD: Freezer-friendly for quick breakfasts.
WOULD I MAKE THIS AGAIN? Absolutely. They taste even better than store-bought.

How to Make Homemade Pop Tarts
Be sure to check out my YouTube video below for a visual on how to assemble these pop tarts.
Step 1 – Preheat and Prep
Preheat your oven to 350°F. Roll your pie crust into a square about 1/4 inch thick. Your square should be roughly 12×12 inches.
I like using a pizza cutter to trim the edges straight for clean, even pop tarts.
Step 2 – Cut the Dough
Using the pizza cutter, cut the dough into four 3-inch strips.
Step 3 – Add Filling
Spoon 1–2 tablespoons of your favorite filling onto one side of each piece of dough, right in the center.
- For berry pop tarts, use your favorite jam or jelly.
- For apple cinnamon, mix the chopped apple with brown sugar, cinnamon, and lemon juice before adding.
Step 4 – Fold and Seal
Fold each piece over to form a rectangle. Use a fork to crimp the edges all the way around, sealing in the filling.
Repeat with any remaining dough.
Step 5 – Egg Wash and Bake
Brush the tops with beaten egg. This gives the pop tarts that beautiful golden finish.
Bake for 20–30 minutes, or until lightly golden and flaky.
Step 6 – Glaze
Whisk together powdered sugar and milk. Drizzle over cooled pop tarts for a classic finish.
Filling Ideas
One of the best things about homemade pop tarts is how customizable they are. Some fun filling ideas include:
- Strawberry jam
- Blueberry preserves
- Raspberry jam
- Apple cinnamon
- Nutella
- Peanut butter and jelly
Tips for Perfect Homemade Pop Tarts
- Don’t overfill or the filling may leak out while baking.
- Seal the edges well with a fork.
- Chill the dough if it gets too warm while working.
- Let pop tarts cool slightly before glazing so it doesn’t melt off.

Storage and Freezing
Store leftover pop tarts in an airtight container at room temperature for up to 3 days.
To freeze, skip the glaze and freeze baked pop tarts for up to 2 months. Reheat in the toaster or oven and glaze after warming.
