Hi, I’m Jennifer Campbell, the voice behind My Colorado Kitchen.

I’m a food lover, home cook, and recipe creator sharing my culinary adventures with you.

My Food Journey

Growing up in the 90’s, I was like most 90’s kids trapped in the skinny is best culture and what diet I needed to go on to achieve some idealistic weight. I was very active, playing multiple sports year round but had no idea how food really could impact my body. 

My parents cooked and did the best they knew how but diet culture, combined with the busyness of two kids playing multiple sports lent to eating out a lot and easy packaged foods we could heat up or grab in a hurry. 

In contrast, my Grandma (what an amazing woman she was!), cooked, gardened, canned, etc. all from scratch until she no longer could. Most of this she did out of necessity raising 9 kids in rural Idaho. This was primarily when I was in elementary school and I wish I could say that spending so much time with her I would have soaked everything up, but unfortunately, I didn’t. I of course loved the food, but the art of homemaking was lost on me.  

So now, inspired by my Grandma, and my own healing food journey, falling in love with cooking using whole real foods and how they affect my body and life (and my family’s life), I decided to create this blog to share my passion and my kitchen with you all. 

What Can You Expect

Here, you’ll find easy-to-follow approachable recipes, cooking tips, and a variety of dishes that are perfect for both busy weekdays and special occasions. I will share some of my Grandma’s recipes (updated, and edited) along with my own to bring the food from long ago back into our kitchens.  

I truly believe food is fuel and can spark so much joy, and by using high quality ingredients all types of food can be both delicious and nourishing. 

More About Me

When I’m not in the kitchen, you can find me on adventures with my husband, Brian, and our 2 kiddos Grace and Paxton. 

I am originally from Idaho, Middleton to be exact, and moved to Arizona after college for a job. Didn’t love the job or Arizona (too hot and brown), but I did fall in love with my now husband, Brian. We lived in Arizona together for 13 years and moved to Colorado in 2023. We LOVE it here! 

Our family loves to be active and recently took up mountain biking, skiing and golf. It has been such a joy to watch the kids reach new milestones in each of these sports. 

I believe that we live in an amazing world created by God and that I am saved by grace alone, through faith alone, in Christ alone. 

“For by grace you have been saved through faith. And this is not your own doing; it is the gift of God, not a result of works, so that no one may boast.” Ephesians 2: 8-9
